Perrier-Jouët joins The Conrad Hong Kong for Afternoon Tea

Observing Riccardo Catarsi, head chef of Nicholini’s, Conrad Hong Kong, in the kitchen is like watching a true master at work. With culinary connoisseurship clearly the building blocks of his DNA, the kitchen is his world. And, given his eclectic embrace of all the very finest internationally-sourced ingredients, it is equally fair to say, the world is very much his kitchen.

A native of Tuscany, Chef Riccardo Catarsi was a keen student of the region’s enviable culinary heritage, although he quickly learnt to supplement it with a contemporary twist that was quite his own. Today, he sums up his approach to producing the singularly appetising fare, for which he is rightly renowned, as “steeped in the past, while looking to the future”.
While the theory sounds great, can it weather a true-life taste-test? Thankfully, the answer here is most definitely in the affirmative. Indeed, exhibits A-E in our hastily-convened court of culinary contemplation came courtesy of the seasonal Five-course&nbsp;White Truffles Tasting Menu.

From the very first serving – Lobster with Mediterranean radish, celery root and white truffle – the breadth and depth of the chef’s ambition became more than apparent. The succulent pieces of Boston lobster, slow-cooked in butter, were ably counter-pointed by the crunchy radish and the smooth mashed potato – all coalescing into a satisfying whole, thanks to a unifying dollop or two of lobster bisque.
Should further proof have been required, this was certainly furnished by the second serving – Wagyu carpaccio, pan-seared foie gras with chanterelle mushroom and white truffle. All in all, a sumptuous sequel, with the three gourmand-gratifying components all competing for top billing, but losing out to a tactically-cunning cameo from the ever-wondrous white truffles.

With our palates still reeling from strikes one and two, Riccardo Catarsi remained relentless, with Tortelli with ox tail, porcini mushrooms, red wine sauce and white truffle soon table-bound. A Tuscan stuffed-pasta dish par excellence, here the Euro guru was clearly on home turf, with his self-confidence goading him into a wanton flourish with the addition of a slightly-sweet red wine sauce. Was it a garnish too far and the sole own goal of the night? Of course not – in fact, it was the perfect counterbalance to the savoury, melt-in-the-mouth tortellis.
If the entrées hadn’t sufficed to dismiss any putative case of unfine foodiness, then either of the main courses would have seen all the jurors dispatched homewards, Signor Catarsi cleared of all charges and awarded costs against any culinary critic who had ever doubted his memorable meal-making mettle. Indeed, the Vitello, brussel sprouts, mixed wild mushrooms, Tuscan pork cheek and white truffle alone would have been enough to clear the court, with the fore-fronted fungi formidably enhancing the appeal of the pork-veal combo with its appetite-arousing aroma.

It was the alternate main course – Monkfish, Parma ham, chard, pumpkin and white truffle – that, however, proved to be the most exquisitely-executed dish of the evening. The fish, first slow-cooked and then wrapped in culatello Parma ham, was pan-fried to perfection to seal its savoury succour.
The end result was a mighty morsel of monkfish, decadently draped in a subtly-sweet, truffle-infused sauce – a truly incredible culinary creation. Our only regret with regard to this devastatingly delicious dish – and one that could equally apply to every single serving, if not the entirety of the evening – was that it was gone all too soon. That, though, ladies and gentlefolk, is reason enough for repeat bookings till the end of December, when the white truffle season officially draws to a close.

When did you find your passion for design, and how has your journey led you to create Tarun Tahiliani Design?
I have sketched fashion since I was six or seven, so design has always been my passion. I studied business at Wharton, then received an associate degree from the Fashion Institute of Technology, New York, before returning to India over two decades ago.&nbsp;My first challenge was to change Indian preconceptions. Indians love colour and wanted mostly shocking colours. For me that was too ‘costume’, I preferred simple but elegant tailoring. So I astutely took the best of both East and West and came up with something unique…
In 1987, I opened the multi brand shop Ensemble, which kicked off the whole idea of home-grown Indian couture. Thereafter, I founded Tarun Tahiliani Design studio in 1995. Since then my signature has evolved as a fusion of textile detail, refined luxury, and meticulous tailoring with innovative modern construct and fit.

How would you describe your design ethos?
I live by the mantra &#8211; India Modern. I grew up in Bombay, in a post-colonial, socialist India, where our traditional crafts were badly neglected. Thankfully, over time, people awakened to India’s truly great heritage and came to realise that contemporary design could give India’s rich traditions a new voice.
Fashion, for me stands for that ethos. As a brand, Tarun Tahiliani embraces the present while preserving India’s heritage of draped form and tradition of artistry. Each creation exemplifying the guiding philosophy – “all that we were and more.”

What is your proudest achievement, and why?
I do not want to sit on my achievements. Achievements are milestones of the past and that’s really over. I work more and more for the love of doing something rather than “what it might achieve for me”. I am constantly plagued by the next step. How do I reinvent myself? How do I change the design aesthetic to stay rooted to its culture yet be modern and wearable.
Can you tell us a bit about your Tarakini collection? How have you departed from more traditional design concepts here?
Tarakini, our Spring Summer 2018 collection came about because I was tired of seeing women weighed down by overtly heavy clothes. We worked to deliver top-grade fit and fashion flair without skimping on comfort, and, like you would look at the universe and the stars, in the lightness as they are floating, that’s where the origins of the name ‘Tarakini’ came in.
The collection juxtaposes astronomy motifs with Mughal-inspired floral and jewel themes, fusing the very best of India’s rich heritage of embroidery, latticework and hand-painted detailing with digital textile printing.

Your designs will be showing in&nbsp;Hong Kong&nbsp;on&nbsp;27 April. What message/impression do you hope to impart?
It feels fantastic to take Indian fashion global. At the moment, everyone is into the wedding market because it’s a comfort zone; it’s where people spend maximum money. With Tarakini, the audience can an exhibition of our unique principles of fit, finish and proportion, and that are a distillation of our design sensibility.

Tarun Tahiliani brings Indian couture to HK with new cosmos-inspired Tarakini collection

Afternoon tea is the perfect way to unwind and treat yourself after a hard morning shopping or whatever you did to deserve it.
But, afternoon tea and fragrances are not something we would generally put together to entice weary shoppers to a hotel lobby. However, this hasn’t stopped the Signorina fragrance selection of Salvatore Ferragamo collaborating with the Lobby Lounge at Conrad Hong Kong.
Devised by Chef Luca de Berardinis from Nicholini’s, the savoury selections include Pappa al Pomodoro with burrata cheese – a classic bread and tomato soup –  sandwiches with smoky unctuous eel and foie gras and red tuna carpaccio with guacamole.
Some of the afternoon tea selections allegedly entice the nostrils with their links to Salvatore Ferragamo fragrances. For example, the marinated salmon and salmon roe sandwiches are supposedly reminiscent of the pink Signorina Eau de Parfum of jasmine and roses.
If a flowery, fragrant afternoon tea is your thing, the Salvatore Ferragamo Fragrance inspired afternoon tea set will be served until 19 February between Mondays and Fridays.

There’s no doubt that guerrilla art has exploded all across Hong Kong. Over the past year, emerging artists have been showcasing their talents on and around the streets of Sheung Wan and Central, hoods often referred to as hipster hangouts. Now with the arrival of the eighth edition of the Asia Contemporary Art Show (ACAS), there has never been a better time to dig deeper into the world of alternative art.
Held twice a year (in September and March) in the luxurious five-star Conrad Hotel, works of art from more than 50 emerging artists from across the globe can typically be found sprawled on queen-sized beds, hung in front of television sets or even placed inside bathtubs. The event, it has to be said, has a somewhat unusual take on what constitutes an art gallery 
Attracting buyers from across the globe, collectors move from room to room to engage directly with the artworks. There is also the opportunity for a closer interaction with the gallery owners and artists over a glass of wine. This year, the September incarnation of the event will showcase more than 3,000 artworks by 89 exhibitors from 17 countries.
